The local cooking boasts a great centuries-old tradition.

Its secret are the characteristics ingredients of the Mediterranean area such as the durum wheat used in making a large variety of homemade products: bread, taralli, friselle, various types of focaccia, panzerotti and fresh pasta (orecchiette, cavatelli, laganari, fricelli).

Worth to be mentioned are the tomatoes “della regina” (a variety of tomatoes cultivated only in the coastal area of the territory of Fasano); the extra virgin olive oil; various types of spiced olives (in water, in salt, alla “calce”, in brine, with chili pepper) ; vegetables and fruit whose freshness is guaranteed thanks to the activity of the Consorzio Agroalimentare.
